Caramel Popcorn
4-5 quarts of popped popcorn
1 cup brown sugar
1/2 cup butter
1/4 cup light or dark corn syrup
1/2 tsp. salt
1/2 tsp baking soda
Put popcorn in a large brown paper bag.
Combine sugar, butter, syrup, and salt in 2 quart glass bowl. Microwave on high for 3-4 minutes, stirring after each minute until it comes to a boil. Microwave two more minutes. Stir in baking soda. Pour over popcorn in bag and microwave 1 more minute. Shake well. Microwave for another 1/2 minute.
Pour in pan. Separate. Let cool.
This is what the caramel looks like once the baking powder is mixed in well.

ReplyDeleteI used to make this all the time, but my problem is that you hardly ever find large brown paper bags anymore! Do you have a source?
ReplyDeleteWe request brown paper bags for our items at the grocery store. Most grocery stores do have brown paper bags, but they give you plastic unless you ask for paper.
ReplyDeleteIf you have a large microwave safe bowl, then you can use this instead of a brown paper bag. I used to do the caramel popcorn this way, but I no longer have my large plastic bowl. It got left in Alaska. :(
Now if I don't have a brown paper bag, I put the popcorn in a large bowl. I then cook the caramel for an extra 30 seconds or minute before pouring it over the popcorn. I stir it up in the bowl to cover the popcorn well. It sometimes takes longer for the caramel to harden when done this way, but it does still work.

ReplyDeleteOh- I know all about stuff getting left in Alaska! :) Most of my stuff is sitting at a friend's house in North Pole! We lived in Fairbanks from Oct 06 to Oct 07. My husband is a restaurant manager and we moved up with a company before. We moved back b/c of cost of living issues (whew! it's expensive to live there!). When we were there, we led the recovery ministry at our church. God's call- however, has not left and we are leaving back to Fairbanks in 2 1/2 weeks!
Jeff works for Chil's now and will be the GM of the one there. We hope to jump back into ministry with our church family there and eventually hope to plant a church.
